Quick & Easy Green Eggs and Ham

This recipe is one of my go-to options for breakfast, post-training or even dinner. If it’s a post-workout meal I’ll often eat it with some steamed sweet potato as well. It’s simple, healthy and most importantly tastes good.


  • 2-3 x eggs
  • 1 tbsp of coconut oil or your choice of healthy cooking oil
  • ¼ of an onion (brown, red or even shallots) 
  • 1-2 chilies (if desired)
  • 1-2 cloves of garlic
  • 1-2 cups of chopped Broccoli and Kale mix
  • Sea salt to taste

*Ham, or smoked salmon optional  


Prepare / dice up ingredients and set aside. Crack the eggs into a bowl; add in a pinch of salt and whisk.

Heat up the pan to just above medium heat, add the oil then fry the onions, garlic and chilies for a minute, stirring often. 

Next add in the broccoli and kale and cook for a 1-2minutes. It’s up to you how much you cook it, I like my broccoli in this a bit crunchy so I don’t cook it for very long.

Add in the whisked eggs and mix all the ingredients together.

Cook until the egg is slightly brown or to your liking, flip it over and repeat. 

Serve with a side of fresh leg ham (smoked salmon if you prefer) and you have yourself a quick and easy healthy meal.
